  • 2 lbs boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1/2 cup sun-dried tomatoes, drained and roughly chopped
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water (slurry)


Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. In a separate bowl, whisk together the chicken broth, heavy cream, Italian seasoning, garlic powder, onion powder, pepper, and salt.
  3. Pour the cream mixture over the chicken in the slow cooker.
  4. Scatter the chopped sun-dried tomatoes over the top.
  5. Cover and cook on low for 4 to 6 hours, or on high for 2 to 3 hours, until the chicken is cooked through and easily shredded.
  6. Remove the chicken and shred it using two forks. Return the shredded chicken to the slow cooker.
  7. Stir in the grated Parmesan cheese until melted and combined.
  8. Pour the cornstarch slurry into the sauce and stir well.
  9. Cook on high, uncovered, for 10 to 15 minutes, or until the sauce thickens to your desired consistency.
  10. Serve immediately over pasta, rice, or mashed potatoes.

Notes

  • For a richer flavor, substitute chicken thighs for chicken breasts. Adjust cooking time if necessary.
  • If you prefer a thicker sauce without using cornstarch, you can skip step 7 and simply let the sauce reduce slightly during the last 30 minutes of cooking on high heat.
