Description

A simple, fresh salad combining crisp cucumber and sweet strawberries with a light dressing.


Ingredients

  • 2 cups sliced fresh strawberries
  • 2 medium cucumbers, thinly sliced
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup fresh mint leaves, chopped
  • For the Vinaigrette: 3 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste


Instructions

  1. Prepare the vinaigrette: In a small bowl, whisk together the olive oil, white wine vinegar, honey, and Dijon mustard. Season with salt and pepper. Set aside.
  2. In a large bowl, combine the sliced strawberries and sliced cucumbers.
  3. Gently pour the vinaigrette over the fruit and vegetables. Toss lightly to coat everything evenly.
  4. Add the chopped mint and crumbled feta cheese, if using. Toss once more very gently.
  5. Serve the salad immediately for the best texture.

Notes

  • For extra crunch, add 1/4 cup of toasted pecans or slivered almonds.
  • If you prefer a sweeter dressing, increase the honey by one teaspoon.
  • You can substitute balsamic glaze for the vinaigrette if you want a richer flavor profile.
