Description

  • 4 ears of corn, husked
  • 1/4 cup vegan mayonnaise
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • Pinch of cayenne pepper (optional)
  • Salt to taste
  • Fresh cilantro, chopped, for garnish
  • Vegan cotija cheese or nutritional yeast, for garnish (optional)


Instructions

  1. Preheat your grill to medium-high heat.
  2. Grill the corn for 10-12 minutes, turning occasionally, until kernels are tender and slightly charred. Alternatively, boil or steam the corn until tender.
  3. While the corn is grilling, prepare the sauce. In a small bowl, combine the vegan mayonnaise, lime juice, chili powder, smoked paprika, and cayenne pepper (if using). Stir until smooth.
  4. Once the corn is cooked, carefully remove it from the grill.
  5. Generously spread the vegan mayonnaise mixture over each ear of corn, ensuring it’s evenly coated.
  6. Season the corn with salt to taste.
  7. Garnish with fresh chopped cilantro and optional vegan cotija cheese or nutritional yeast.
