- 1/4 cup vegan mayonnaise
- 2 tablespoons fresh lime juice
- 1/2 teaspoon chili powder
- 1/4 teaspoon smoked paprika
- Pinch of cayenne pepper (optional)

- Fresh cilantro, chopped, for garnish
- Vegan cotija cheese or nutritional yeast, for garnish (optional)
Instructions
- Preheat your grill to medium-high heat.
- Grill the corn for 10-12 minutes, turning occasionally, until kernels are tender and slightly charred. Alternatively, boil or steam the corn until tender.
- While the corn is grilling, prepare the sauce. In a small bowl, combine the vegan mayonnaise, lime juice, chili powder, smoked paprika, and cayenne pepper (if using). Stir until smooth.
- Once the corn is cooked, carefully remove it from the grill.
- Generously spread the vegan mayonnaise mixture over each ear of corn, ensuring it’s evenly coated.
- Season the corn with salt to taste.
- Garnish with fresh chopped cilantro and optional vegan cotija cheese or nutritional yeast.
