Description
This Detox Cabbage Soup is packed with immune-boosting vegetables and is a perfect, healthy dinner for when you’re feeling under the weather or want a nutritious meal.
Ingredients

- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, peeled and sliced
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 pound green cabbage, shredded
- 6 cups vegetable broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and freshly ground black pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 8-10 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in shredded cabbage, vegetable broth, diced tomatoes, thyme, and rosemary.
- Bring to a boil, then reduce heat and simmer, covered, for at least 30 minutes, or until vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- For an extra immune boost, add a pinch of cayenne pepper.
- You can add other vegetables like spinach or kale in the last 5 minutes of cooking.
- This soup freezes well for future meals.
