  • 1 pound baby potatoes, halved or quartered if large
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/4 teaspoon paprika, plus more for garnish
  • 1/8 teaspoon garlic powder
  • 2 tablespoons finely chopped fresh chives, plus more for garnish


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the baby potatoes with olive oil, salt, and pepper.
  3. Spread the seasoned potatoes in a single layer on a baking sheet.
  4. Roast for 20-25 minutes, or until tender and slightly crispy. Let cool slightly.
  5. Meanwhile, place the eggs in a saucepan and cover with cold water. Bring to a boil, then remove from heat, cover, and let stand for 10-12 minutes.
  6. Drain the eggs and immediately transfer them to an ice bath to cool.
  7. Once cooled, peel the eggs and slice them in half lengthwise. Scoop out the yolks into a medium bowl.
  8. Mash the egg yolks with a fork until smooth.
  9. Add the mayonnaise, Dijon mustard, apple cider vinegar, paprika, and garlic powder to the mashed yolks. Mix until well combined and creamy.
  10. Stir in the chopped chives.
  11. Spoon or pipe the deviled egg filling into the hollowed-out egg white halves.
  12. Arrange the roasted potato pieces on a serving platter.
  13. Top each potato piece with a deviled egg filling.
  14. Garnish with extra paprika and chives.

Notes

  • For an extra crispy potato base, you can roast them a little longer.
  • Adjust the amount of mustard and vinegar to your preference.
  • You can make the deviled egg filling ahead of time and refrigerate it.
