These double chocolate protein muffins are a delicious and satisfying way to curb your chocolate cravings while boosting your protein intake. They are perfect for a post-workout snack or a filling breakfast on the go.

- 1 1/2 cups whole wheat flour
- 1/2 cup unsweetened cocoa powder
- 1 cup chocolate protein powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsweetened applesauce
- 1/2 cup unsweetened almond milk
- 1/4 cup maple syrup or honey
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips
Instructions
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or spray with non-stick spray.
- In a large bowl, whisk together the whole wheat flour, unsweetened cocoa powder, chocolate protein powder, baking soda, and salt.
- In a separate medium bowl, whisk together the unsweetened applesauce, unsweetened almond milk, maple syrup or honey, eggs, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are fine.
- Fold in the dark chocolate chips.
- Divide the batter evenly among the 12 muffin cups.
- Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- Store leftover muffins in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 5 days.
- You can freeze these muffins for up to 3 months. Thaw at room temperature or warm gently in the microwave.
- Adjust the sweetness to your liking. You can add more or less maple syrup or honey.
- Feel free to experiment with different types of protein powder, but be aware that taste and texture may vary.
