A simple, baked quick bread that captures the sweet, spiced flavor of traditional apple fritters in an easy loaf format.

- 1 cup granulated sugar

- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 2 cups peeled, cored, and chopped apples (such as Granny Smith or Honeycrisp)
- 1/2 cup powdered sugar (for glaze)
- 2 tablespoons milk or water (for glaze)
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a standard 9×5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Set this dry mixture aside.
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry mixture. Mix until just combined; do not overmix.
- Gently fold in the chopped apples.
- Pour the batter into the prepared loaf pan.
- Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
- To make the glaze, whisk together the powdered sugar and 2 tablespoons of milk or water until smooth. Drizzle the glaze over the cooled bread before slicing and serving.
Notes
- Use firm, slightly tart apples for the best texture and flavor balance against the sweet bread.
- If you prefer a crumb topping instead of a glaze, mix 1/2 cup flour, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, and 3 tablespoons cold butter until crumbly, then sprinkle over the batter before baking.
