Description

Bake a moist, flavorful quick bread combining grated zucchini, diced apple, and warm cinnamon spice. This recipe is simple for beginner bakers.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini, squeezed dry
  • 1 cup finely diced apple (peeled or unpeeled)

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a large bowl, whisk together the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
  4. Add the dry ingredients to the wet ingredients. Mix only until just combined. Do not overmix.
  5. Gently fold in the squeezed, grated zucchini and the diced apple pieces.
  6. Pour the batter evenly into the prepared loaf pan.
  7. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before carefully turning it out onto a wire rack to cool completely.

Notes

  • Squeeze excess moisture from the grated zucchini using paper towels or a clean kitchen cloth for the best texture.
  • Use firm apples like Granny Smith or Honeycrisp for best results when baking.
  • If the top browns too quickly during baking, loosely tent the loaf with aluminum foil for the last 15 minutes.
