Description

  • 1 1/2 cups packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed very ripe bananas (about 2-3 medium bananas)
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips, plus 1/2 cup for topping


Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and mashed bananas until just combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or by hand until just incorporated. Do not overmix.
  6. Fold in 1 cup of the chocolate chips.
  7. Spread the batter evenly into the prepared baking pan. Sprinkle the remaining 1/2 cup of chocolate chips over the top.
  8. Bake for 30 to 35 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached.
  9. Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment overhang and cutting them into squares.

Notes

  • Use bananas that are heavily spotted or almost black for the best banana flavor and moisture.
  • For a thicker, fudgier bar, you can use an 8×8 inch pan, but you will need to increase the baking time by 10 to 15 minutes.
  • For a bakery look, press a few extra chocolate chips into the top immediately after removing the pan from the oven.
