Easy Banana Bread Cinnamon Rolls

Description

Make sweet, soft rolls that taste like banana bread but are shaped like cinnamon rolls, topped with a simple cream cheese frosting.

  • 1 cup mashed ripe bananas (about 2 large)
  • 1/2 cup unsalted butter, melted, divided
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup granulated sugar (for filling)
  • 1/4 cup packed light brown sugar (for filling)
  • 2 tablespoons ground cinnamon (for filling)
  • 1/2 cup cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk or cream


Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Grease a 9×13 inch baking pan.
  2. In a large bowl, mix the mashed bananas, 1/4 cup of the melted butter, 1/2 cup brown sugar, egg, and vanilla extract until combined.
  3. In a separate bowl, whisk together the flour, baking powder, salt, 1 teaspoon cinnamon, and nutmeg.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined to form a soft dough. Do not overmix.
  5. On a lightly floured surface, roll the dough into a large rectangle, about 12×18 inches.
  6. In a small bowl, mix the 1/2 cup granulated sugar, 1/4 cup brown sugar, and 2 tablespoons cinnamon for the filling.
  7. Brush the remaining 1/4 cup melted butter over the surface of the dough rectangle. Sprinkle the cinnamon-sugar filling evenly over the buttered dough.
  8. Starting from a long edge, tightly roll the dough into a log. Slice the log into 12 equal rolls.
  9. Place the rolls cut-side up in the prepared baking pan.
  10. Bake for 20 to 25 minutes, or until the tops are golden brown and cooked through.
  11. While the rolls bake, prepare the frosting: Beat the softened cream cheese and 1/4 cup softened butter until smooth. Gradually beat in the powdered sugar and 1 teaspoon vanilla. Add milk or cream one teaspoon at a time until you reach a spreadable consistency.
  12. Remove the rolls from the oven and let them cool slightly for 10 minutes before spreading the frosting evenly over the warm rolls.

Notes

  • Use very ripe bananas for the best flavor in the dough.
  • You can prepare the dough the night before, cover it, and refrigerate it. Add 5 minutes to the baking time if baking directly from the refrigerator.
  • For a richer flavor, substitute the 1/4 cup melted butter in the dough with browned butter.
