- 1/2 cup milk
- 1/2 cup beer (lager or pale ale recommended)
- 8 ounces sharp cheddar cheese, shredded
- 4 ounces Monterey Jack cheese, shredded
- 1/4 teaspoon garlic powder
- Pinch of cayenne pepper
- Salt to taste
Instructions
- Melt the butter in a medium saucepan over medium heat.
- Whisk in the flour and cook for one minute, stirring constantly to create a roux.
- Gradually whisk in the milk until the mixture is smooth. Cook until the sauce thickens slightly, about 2 minutes.
- Slowly pour in the beer while whisking continuously. Bring the mixture to a gentle simmer.
- Reduce the heat to low. Add the shredded cheeses one handful at a time, stirring until each addition is fully melted and smooth before adding more. Do not let the mixture boil.
- Stir in the garlic powder and cayenne pepper. Taste and add salt if needed.
- Serve immediately with pretzels or chips.

- Shred your own cheese; pre-shredded cheese contains anti-caking agents that prevent smooth melting.
- Use a mild beer so the flavor does not overpower the cheese.
