Instructions

  1. Activate the yeast: In a large bowl, combine the warm water, yeast, and sugar. Let this mixture sit for 5 to 10 minutes until it becomes foamy. This shows the yeast is active.
  2. Mix the dough: Add the flour, salt, and olive oil to the yeast mixture. Mix with a spoon or a stand mixer until a shaggy dough forms.
  3. Knead the dough: Turn the dough out onto a lightly floured surface and knead for 5 to 7 minutes until the dough is smooth and elastic. Alternatively, use a dough hook on low speed for 5 minutes.
  4. First rise: Place the dough in a lightly oiled bowl, turning once to coat. Cover the bowl with plastic wrap or a clean kitchen towel and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.
  5. Shape the breadsticks: Gently punch down the risen dough. Divide the dough into two equal pieces. Roll each piece into a rectangle about 1/2 inch thick. Cut each rectangle into 10 to 12 strips, about 1 inch wide.
