Easy Chickpea Potato Curry

Description

Prepare this simple and satisfying chickpea and potato curry quickly. This recipe uses common ingredients for a flavorful weeknight meal.


Ingredients

  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 2 medium potatoes, peeled and cubed (about 1 inch pieces)
  • 1 cup vegetable broth
  • 1/2 cup full-fat coconut milk (canned)
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon sugar
  • Fresh cilantro, chopped, for garnish


Instructions

  1. Heat the oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and grated ginger. Cook for 1 minute until fragrant.
  3. Stir in the cumin, coriander, turmeric, and cayenne pepper, if using. Cook the spices for 30 seconds, stirring constantly.
  4. Pour in the diced tomatoes, chickpeas, cubed potatoes, and vegetable broth. Stir to combine.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 to 20 minutes, or until the potatoes are tender when pierced with a fork.
  6. Stir in the coconut milk, salt, and sugar. Cook uncovered for another 5 minutes, allowing the curry to thicken slightly.
  7. Taste and adjust salt if needed. Serve hot, garnished with fresh cilantro.

Notes

  • Serve this curry over basmati rice or with warm naan bread.
  • For a thicker curry, mash a few of the potato pieces against the side of the pot before adding the coconut milk.
  • If you do not have fresh ginger, use 1/2 teaspoon ground ginger.
