Easy Chocolate Cream Cheese Swirl Muffins

Description

Make moist, tender chocolate muffins with a simple, tangy cream cheese swirl. This recipe is quick and beginner-friendly.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup boiling water
  • 4 ounces cream cheese, softened
  • 2 tablespoons granulated sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, 3/4 cup sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate medium bowl, whisk together the egg, milk, oil, and 1 teaspoon vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Carefully stir in the boiling water until the batter is smooth. The batter will be thin.
  6. In a small bowl, beat the softened cream cheese, 2 tablespoons sugar, egg yolk, and 1/2 teaspoon vanilla extract until smooth.
  7. Fill each muffin cup about two-thirds full with the chocolate batter.
  8. Drop a small spoonful (about 1 teaspoon) of the cream cheese mixture onto the center of each muffin.
  9. Use a toothpick or small knife to gently swirl the cream cheese mixture into the chocolate batter.
  10. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  11. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Do not overmix the chocolate batter after adding the liquid; this keeps your muffins tender.
  • For a thicker swirl, use slightly less boiling water in the chocolate batter.
  • You can prepare the cream cheese mixture ahead of time and keep it refrigerated for up to two days.
