  • 1/2 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup all-purpose flour (for topping)
  • 1/4 cup cold unsalted butter, cut into small pieces (for topping)


Instructions

  1. Preheat your oven to 375 degrees F. Line a 12-cup muffin tin with paper liners or grease well.
  2. Prepare the crumble topping: In a small bowl, mix together the brown sugar, 1/4 cup flour, cinnamon, and 1/4 cup cold butter using your fingers or a pastry blender until coarse crumbs form. Set aside.
  3. Prepare the muffin batter: In a large bowl, whisk together the 1 3/4 cups flour, 3/4 cup granulated sugar, baking powder, and salt.
  4. In a separate medium bowl, beat the softened butter until creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined; do not overmix.
  6. Fill the prepared muffin cups about two-thirds full with batter.
  7. Sprinkle a generous amount of the prepared crumble topping over the top of each muffin.
  8. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For extra flavor, you can add 1/2 teaspoon of nutmeg to the crumble topping mixture.
