Description

Make this simple, comforting chicken noodle casserole for a satisfying family dinner. It features a creamy sauce, tender chicken, and a crisp topping.

Ingredients

Scale
  • 2 cups cooked, shredded chicken (rotisserie chicken works well)
  • 8 ounces egg noodles
  • 1 tablespoon butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup crushed buttery crackers (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Cook the egg noodles according to package directions until al dente. Drain well and set aside.
  3. Melt the butter in a large saucepan over medium heat. Whisk in the flour and cook for one minute.
  4. Gradually whisk in the chicken broth and milk until the mixture thickens slightly, about 5 minutes.
  5. Stir in the onion powder, garlic powder, salt, and pepper. Remove the pan from the heat.
  6. Stir in the shredded chicken, cooked noodles, mixed vegetables, and 3/4 cup of the cheddar cheese until everything is combined.
  7. Pour the mixture into the prepared baking dish.
  8. In a small bowl, mix the crushed crackers with the remaining 1/4 cup of cheddar cheese. Sprinkle this mixture evenly over the top of the casserole.
  9. Bake for 20 to 25 minutes, or until the casserole is bubbly and the topping is golden brown and crisp.
  10. Let the casserole rest for 5 minutes before serving.

Notes

  • For extra flavor, use a high-quality, low-sodium chicken broth.
  • You can substitute frozen broccoli florets for the mixed vegetables if you prefer.
  • If you do not have buttery crackers, use panko breadcrumbs mixed with 1 tablespoon of melted butter instead.
