Description

Prepare this simple, protein-rich edamame salad quickly. It features crisp vegetables and a bright sesame ginger dressing, making it perfect for a healthy lunch or side dish.

Ingredients

Scale
  • 2 cups shelled, cooked edamame
  • 1 cup chopped cucumber
  • 1 red bell pepper, diced
  • 1/2 cup shredded carrot
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 teaspoon honey or maple syrup
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Combine the shelled edamame, cucumber, red bell pepper, carrot, and red onion in a large bowl.
  2. In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, grated ginger, minced garlic, and honey until well combined. This is your dressing.
  3. Pour the dressing over the vegetable and edamame mixture.
  4. Toss gently until all ingredients are evenly coated.
  5. Stir in the fresh cilantro, if using.
  6. Serve immediately or chill for 15 minutes to allow flavors to meld.

Notes

  • For meal prep, store the dressing separately and combine just before serving to keep the vegetables crisp.
  • If you prefer a peanut flavor, substitute 1 tablespoon of peanut butter for the honey in the dressing.
  • Use frozen edamame; thaw and cook according to package directions before using.
