- 1 medium apple, cored and diced
- 1 teaspoon ground cinnamon
- 1 tablespoon water
- 1 cup plain non-fat Greek yogurt
- 1 teaspoon maple syrup (optional)
- 1 tablespoon chopped walnuts or pecans
Instructions
- Place the diced apple, cinnamon, and water in a microwave-safe bowl.
- Microwave on high for 1 to 2 minutes, or until the apples are tender. Stir halfway through cooking.
- If you prefer, you can cook the apples in a small saucepan over medium heat until soft, about 5 minutes.
- In a separate bowl, mix the Greek yogurt with the maple syrup, if using.
- Spoon the yogurt mixture into a serving bowl.
- Top the yogurt with the warm apple-cinnamon mixture.
- Sprinkle the chopped nuts over the top before serving.
Notes
- For meal prep, cook the apples ahead of time and store them in the refrigerator for up to four days.
- Use 2% or full-fat Greek yogurt if you prefer a richer texture.
