Description

Prepare a quick, high-protein breakfast or snack using baked apples, cinnamon, and creamy Greek yogurt.


Ingredients

  • 1 medium apple, cored and diced
  • 1 teaspoon ground cinnamon
  • 1 tablespoon water
  • 1 cup plain non-fat Greek yogurt
  • 1 teaspoon maple syrup (optional)
  • 1 tablespoon chopped walnuts or pecans


Instructions

  1. Place the diced apple, cinnamon, and water in a microwave-safe bowl.
  2. Microwave on high for 1 to 2 minutes, or until the apples are tender. Stir halfway through cooking.
  3. If you prefer, you can cook the apples in a small saucepan over medium heat until soft, about 5 minutes.
  4. In a separate bowl, mix the Greek yogurt with the maple syrup, if using.
  5. Spoon the yogurt mixture into a serving bowl.
  6. Top the yogurt with the warm apple-cinnamon mixture.
  7. Sprinkle the chopped nuts over the top before serving.

Notes

  • For meal prep, cook the apples ahead of time and store them in the refrigerator for up to four days.
  • Use 2% or full-fat Greek yogurt if you prefer a richer texture.
