Easy Homemade Chicken Taquitos

Description

Follow these simple steps to make crispy, flavorful chicken taquitos at home using basic ingredients. This recipe works well for baking, air frying, or shallow frying.


Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 2 cups cooked, shredded chicken breast
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 cup chicken broth
  • 12 small corn tortillas
  • Cooking spray or oil for cooking


Instructions

  1. Heat the olive oil in a skillet over medium heat. Add the onion and cook until soft, about 5 minutes. Add the garlic and cook for 1 minute more.
  2. Add the shredded chicken, chili powder, cumin, and salt to the skillet. Stir to combine.
  3. Pour in the chicken broth. Cook, stirring occasionally, until the liquid evaporates and the mixture is heated through, about 3 minutes. Remove from heat.
  4. Warm the corn tortillas briefly in a damp paper towel in the microwave for 30 seconds, or quickly heat them in a dry skillet. This makes them pliable.
  5. Place about 2 tablespoons of the chicken filling near one edge of a warm tortilla. Roll the tortilla tightly around the filling.
  6. Secure the rolled taquito with a toothpick inserted lengthwise through the seam. Repeat with the remaining tortillas and filling.
  7. To cook, you can bake at 400°F (200°C) for 15-20 minutes, turning halfway, until crisp. For air frying, cook at 375°F (190°C) for 8-10 minutes, flipping halfway. For shallow frying, cook in about 1/2 inch of hot oil for 2-3 minutes per side until golden brown.
  8. Remove toothpicks before serving. Serve immediately with your favorite toppings.

Notes

  • To prevent taquitos from unrolling, secure them tightly with toothpicks inserted through the seam.
  • If your tortillas crack when rolling, warm them longer until they are very soft.
  • For extra crispiness when baking or air frying, lightly spray the outside of the rolled taquitos with cooking spray or oil before cooking.
