  • 1/2 cup honey
  • 1/4 cup vegetable oil

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the whole wheat flour, wheat bran, baking soda, baking powder, salt, and cinnamon.
  3. In a separate medium bowl, whisk the egg lightly. Add the buttermilk, honey, vegetable oil, and vanilla extract. Mix until combined.
  4. Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Do not overmix; a few lumps are fine.
  5. Fold in the raisins, if you are using them.
  6. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.

Notes
