Description

Ingredients

  • 14 ounces sweetened condensed milk
  • 3 1/2 cups sweetened flaked coconut, divided
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil


Instructions

  1. In a medium bowl, mix the sweetened condensed milk and 3 cups of the flaked coconut until combined.
  2. Roll the mixture into small balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
  3. Chill the coconut balls in the refrigerator for at least 30 minutes to firm up.
  4. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is smooth.
  5. Dip each chilled coconut ball into the melted chocolate, allowing excess chocolate to drip off.
  6. Roll the chocolate-coated balls immediately in the remaining 1/2 cup of flaked coconut, if desired.
  7. Return the finished coconut balls to the parchment-lined sheet and chill until the chocolate sets, about 1 hour.
