- 2 cups rolled oats
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 1/2 cups milk (dairy or non-dairy)
- 1 large egg
- 1/4 cup maple syrup or brown sugar
- 1 teaspoon vanilla extract
- 2 cups fresh or frozen sliced peaches
- 1/2 cup all-purpose flour
- 1/4 cup packed brown sugar (for topping)
- 1/4 cup cold unsalted butter, cut into small pieces
Instructions
- Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease an 8×8 inch baking dish.
- In a large bowl, mix the rolled oats, baking powder, cinnamon, and salt.
- In a separate bowl, whisk together the milk, egg, maple syrup, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.
- Spread half of the peach slices evenly over the bottom of the prepared baking dish. Pour the oatmeal mixture over the peaches. Top with the remaining peach slices.
- Prepare the crumb topping: In a small bowl, combine the flour and 1/4 cup brown sugar. Cut in the cold butter using your fingers or a pastry blender until the mixture resembles coarse crumbs.
- Sprinkle the crumb topping evenly over the peaches and oatmeal mixture.
- Bake for 35 to 40 minutes, or until the topping is golden brown and the oatmeal is set.
- Let the oatmeal cool for 5 minutes before serving.
Notes
- You can use frozen peaches; do not thaw them before using.
- For a richer flavor, substitute half of the milk with heavy cream.
- Serve warm with an extra sprinkle of cinnamon if desired.
