- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
- Prepare the crust: In a medium bowl, combine the flour, 1/4 cup brown sugar, and salt. Cut in the 1/2 cup cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Press the crust mixture evenly into the bottom of the prepared pan. Bake for 15 minutes until lightly golden.
- While the crust bakes, prepare the filling: In a separate small bowl, whisk together the egg, 1/2 cup brown sugar, corn syrup, 1 tablespoon melted butter, and vanilla extract until smooth.
- Stir the chopped pecans into the filling mixture.
- Pour the pecan filling evenly over the hot, pre-baked crust.
- Return the pan to the oven and bake for an additional 20 to 25 minutes, or until the filling is set and lightly browned.
- Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment overhang. Cut into squares.
Notes
- For a fudgier texture, slightly reduce the corn syrup by one teaspoon.
- If you prefer a deeper molasses flavor, substitute 1 tablespoon of the light brown sugar with dark brown sugar in the filling.
- Allow the bars to cool completely before cutting; this prevents the filling from running.
