Description

Make simple, chewy pecan pie bars using a rich brown sugar filling. This recipe is straightforward and yields a satisfying dessert.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup cold unsalted butter, cubed
  • 1/4 cup packed light brown sugar
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup packed light brown sugar
  • 1/4 cup light corn syrup
  • 1 tablespoon unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. Prepare the crust: In a medium bowl, combine the flour, 1/4 cup brown sugar, and salt. Cut in the 1/2 cup cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Press the crust mixture evenly into the bottom of the prepared pan. Bake for 15 minutes until lightly golden.
  4. While the crust bakes, prepare the filling: In a separate small bowl, whisk together the egg, 1/2 cup brown sugar, corn syrup, 1 tablespoon melted butter, and vanilla extract until smooth.
  5. Stir the chopped pecans into the filling mixture.
  6. Pour the pecan filling evenly over the hot, pre-baked crust.
  7. Return the pan to the oven and bake for an additional 20 to 25 minutes, or until the filling is set and lightly browned.
  8. Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment overhang. Cut into squares.

Notes

  • For a fudgier texture, slightly reduce the corn syrup by one teaspoon.
  • If you prefer a deeper molasses flavor, substitute 1 tablespoon of the light brown sugar with dark brown sugar in the filling.
  • Allow the bars to cool completely before cutting; this prevents the filling from running.
