Description
Make a simple, soft spread using lemon and cream cheese. This recipe requires no baking and comes together quickly.
Ingredients
Scale
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon vanilla extract
Instructions
- Place the softened cream cheese in a medium bowl.
- Use an electric mixer or a sturdy whisk to beat the cream cheese until it is smooth and creamy.
- Gradually add the powdered sugar to the cream cheese mixture, mixing until just combined.
- Add the lemon juice, lemon zest, and vanilla extract.
- Beat the mixture on medium speed until it is light, fluffy, and fully combined. Scrape down the sides of the bowl as needed.
- Taste and add more powdered sugar if you prefer a sweeter spread.
- Chill the spread for at least 30 minutes before serving for a firmer texture, or serve immediately for a softer consistency.
Notes
- For an even softer texture, let the cream cheese sit at room temperature for one hour before starting.
- You can substitute lime juice for half of the lemon juice for a mixed citrus flavor.
- Store leftovers in an airtight container in the refrigerator for up to one week.
