  • Diet: Vegetarian

Description

Make a simple, soft spread using lemon and cream cheese. This recipe requires no baking and comes together quickly.

Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract

Instructions

  1. Place the softened cream cheese in a medium bowl.
  2. Use an electric mixer or a sturdy whisk to beat the cream cheese until it is smooth and creamy.
  3. Gradually add the powdered sugar to the cream cheese mixture, mixing until just combined.
  4. Add the lemon juice, lemon zest, and vanilla extract.
  5. Beat the mixture on medium speed until it is light, fluffy, and fully combined. Scrape down the sides of the bowl as needed.
  6. Taste and add more powdered sugar if you prefer a sweeter spread.
  7. Chill the spread for at least 30 minutes before serving for a firmer texture, or serve immediately for a softer consistency.

Notes

  • For an even softer texture, let the cream cheese sit at room temperature for one hour before starting.
  • You can substitute lime juice for half of the lemon juice for a mixed citrus flavor.
  • Store leftovers in an airtight container in the refrigerator for up to one week.
