Easy Lemon Glazed Spring Cookies

Ingredients

  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons fresh lemon zest
  • 2 tablespoons fresh lemon juice (for cookie dough)
  • 1 1/2 cups powdered sugar (for glaze)
  • 3 tablespoons fresh lemon juice (for glaze)


Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Stir in the lemon zest and 2 tablespoons of lemon juice. The dough will be slightly soft.
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Flatten slightly with the bottom of a glass.
  7. Bake for 9 to 11 minutes, or until the edges are lightly golden. Do not overbake.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  9. While cookies cool, prepare the glaze: Whisk together the powdered sugar and 3 tablespoons of lemon juice until smooth. Add more powdered sugar or juice, one teaspoon at a time, to reach a thick but pourable consistency.
  10. Once cookies are fully cool, drizzle or dip the tops into the lemon glaze. Let the glaze set before serving.

Notes

  • For a stronger citrus flavor, add an extra teaspoon of lemon zest to the dough.
  • If you prefer a softer cookie, slightly reduce the baking time by one minute.
  • You can use a fork to create a crosshatch pattern on the dough balls before baking if you prefer a different look.
