Description

  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon zest

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup freeze-dried strawberry powder (or finely ground freeze-dried strawberries)
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon lemon juice (for glaze)


Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg, vanilla extract, lemon zest, and lemon juice until combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  6. Divide the dough in half. Mix the freeze-dried strawberry powder into one half until the color is uniform. You will have one plain lemon dough and one strawberry lemon dough.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, alternating between the plain and strawberry doughs for a marbled effect, or keep them separate.
  8. Bake for 10 to 12 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  9. To make the glaze, whisk together the powdered sugar and 1 tablespoon of lemon juice until smooth. Drizzle the glaze over the cooled cookies. Allow the glaze to set before serving.

Notes

  • For a stronger strawberry flavor, use 1/3 cup of finely ground freeze-dried strawberries in the dough.
  • If you do not have freeze-dried strawberries, you can omit the powder and make plain lemon cookies, increasing the lemon zest by 1/2 teaspoon.
  • Store cooled cookies in an airtight container at room temperature for up to 4 days.
