Description

Make this simple, comforting Tamale Pie casserole using ground beef and a quick cornbread topping for a satisfying weeknight Tex-Mex dinner.

  • 1 medium onion, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can mild red enchilada sauce
  • 1 cup frozen corn kernels

  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1 (8.5 ounce) package cornbread mix (like Jiffy)
  • Ingredients listed on cornbread mix box (usually milk and egg)
  • 1 cup shredded cheddar cheese


Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a 9-inch pie plate or an 8×8 inch baking dish.
  2. Heat the oil in a large skillet over medium heat. Add the ground beef and onion. Cook until the beef is browned and the onion is soft. Drain off any excess grease.
  3. Stir the black beans, enchilada sauce, corn, chili powder, cumin, and salt into the meat mixture. Cook for 5 minutes, stirring occasionally, until heated through. Spread this mixture evenly into the bottom of your prepared pie plate.
  4. Prepare the cornbread batter according to the package directions, using the liquid and egg amounts specified on the box.
  5. Pour the cornbread batter evenly over the meat filling.
  6. Bake for 25 to 30 minutes, or until the cornbread topping is golden brown and a toothpick inserted into the center comes out clean.
  7. Remove the pie from the oven. Sprinkle the shredded cheddar cheese over the top. Return to the oven for 5 minutes, or until the cheese is melted and bubbly.
  8. Let the Tamale Pie cool for 10 minutes before slicing and serving.
