Description

Ingredients

Scale
  • 2 cups shelled edamame (frozen or fresh)
  • 1/4 cup tahini
  • 2 cloves garlic
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil, plus more for serving
  • 2-4 tablespoons cold water
  • 1/2 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. If using frozen edamame, cook according to package directions. Drain well.
  2. Combine cooked edamame, tahini, garlic, lemon juice, olive oil, and cumin in a food processor.
  3. Process until smooth, adding cold water one tablespoon at a time until desired consistency is reached.
  4. Season with salt and pepper to taste.
  5. Transfer to a serving dish and drizzle with extra olive oil if desired.

Notes

  • For a spicier hummus, add a pinch of red pepper flakes.
  • Garnish with sesame seeds, chopped parsley, or a sprinkle of paprika.
