Instructions
- In a large bowl, combine corn kernels, red onion, cilantro, eggs, milk, Parmesan cheese, baking powder, salt, and pepper.
- Gradually add the flour to the corn mixture, stirring until just combined. Do not overmix.
- Prepare the spicy aioli by whisking together mayonnaise, sriracha, lime juice, and garlic powder in a small bowl. Set aside.
- Heat about 1 inch of vegetable oil in a large skillet over medium-high heat until shimmering.
- Drop spoonfuls of the corn batter into the hot oil, being careful not to overcrowd the skillet.
- Fry for 3-4 minutes per side, until golden brown and cooked through.
- Remove fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
