- 4 cups fresh or frozen corn kernels
- 2 tablespoons unsalted butter
- 1/2 cup mayonnaise
- 1/4 cup sour cream or Mexican crema
- 1/2 cup crumbled cotija cheese, plus more for garnish
- 2 tablespoons fresh lime juice
- 1/4 cup finely chopped fresh cilantro, plus more for garnish
- 1/2 teaspoon chili powder, plus more for garnish
- Pinch of cayenne pepper (optional)
- Salt to taste
- Lime wedges for serving
Instructions
- If using fresh corn, cut the kernels from the cobs. If using frozen corn, thaw it.
- In a large skillet, melt the butter over medium-high heat. Add the corn kernels and cook for 5-7 minutes, stirring occasionally, until slightly charred and tender. Remove from heat and let cool slightly.
- In a large bowl, combine the mayonnaise, sour cream or Mexican crema, cotija cheese, lime juice, cilantro, chili powder, and cayenne pepper (if using).
- Add the cooled corn to the mixture and stir to combine. Season with salt to taste.
- Spoon the elote mixture into individual serving cups.
- Garnish with extra cotija cheese, cilantro, and a sprinkle of chili powder. Serve immediately with lime wedges.
Notes
- For a smoky flavor, grill the corn before cutting the kernels.
- Adjust the amount of chili powder and cayenne pepper to your spice preference.
- If cotija cheese is unavailable, use feta cheese as a substitute.
