Description

This Everything Bagel Casserole is a savory breakfast bake that captures the iconic flavors of an everything bagel with cream cheese in a convenient one-pan meal. It’s a hearty and delicious way to start your day.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound breakfast sausage, casings removed
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 8 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 everything bagels, cut into 1-inch cubes
  • 2 cups shredded cheddar cheese
  • 1/2 cup cream cheese, cut into small cubes


Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Heat olive oil in a large skillet over medium-high heat. Add the breakfast sausage and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Add the chopped onion and red bell pepper to the skillet with the sausage. Cook until softened, about 5-7 minutes.
  4. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  5. Add the cubed everything bagels to the egg mixture and let them soak for about 5 minutes, stirring occasionally.
  6. Stir in the cooked sausage, onion, and pepper mixture into the egg and bagel mixture.
  7. Pour half of the mixture into the prepared baking dish. Sprinkle half of the shredded cheddar cheese and dot half of the cream cheese cubes over the top.
  8. Pour the remaining egg and bagel mixture over the cheese. Top with the remaining cheddar cheese and cream cheese cubes.
  9. Bake for 35-45 minutes, or until the casserole is set and golden brown on top.
  10. Let it cool for a few minutes before serving.

Notes

  • For an extra everything bagel flavor, you can sprinkle a little extra everything bagel seasoning on top before baking.
  • If you don’t have breakfast sausage, you can use bacon or ham.
  • This casserole can be assembled the night before and baked in the morning. Cover and refrigerate, then add about 5-10 minutes to the baking time.
