Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 large yellow onions, thinly sliced
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper, divided
- 1/4 cup dry sherry or beef broth
- 1 tablespoon all-purpose flour
- 2 cups beef broth
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon dried thyme
- 1 cup shredded Gruyère cheese
- 1/2 cup shredded Swiss cheese
- 4 slices French baguette, toasted
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
- Season chicken breasts with 1/2 teaspoon salt and 1/4 teaspoon pepper. Place the chicken in the prepared baking dish.
- In a large skillet over medium heat, add olive oil. Add the sliced onions and cook slowly, stirring occasionally, for 20-25 minutes until deeply caramelized and sweet. Add the remaining 1/2 teaspoon salt and 1/4 teaspoon pepper during the last 5 minutes.
- Pour the sherry or broth over the onions and scrape up any browned bits from the bottom of the pan. Cook for 1 minute.
- Sprinkle the flour over the onions and stir for 1 minute. Gradually whisk in the beef broth, Worcestershire sauce, and thyme. Bring to a simmer and cook until the sauce thickens slightly, about 3-5 minutes.
- Pour the onion sauce evenly over the chicken in the baking dish.
- Bake for 25 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C).
- In a small bowl, toss the Gruyère and Swiss cheeses together. Sprinkle the cheese mixture over the chicken and sauce.
- Return the dish to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
- Top each serving with a toasted baguette slice before serving hot.
Notes
- For deeper flavor, caramelize the onions slowly over lower heat. Patience here makes a big difference.
- Ensure your chicken is relatively uniform in thickness so it cooks evenly.
- You can use a mix of provolone and Swiss if Gruyère is unavailable.
