This French Onion Soup Casserole brings all the comforting flavors of classic French onion soup into an easy-to-share casserole dish. Layers of sweet, caramelized onions, crusty bread, and melted Gruyère cheese create a delicious and satisfying meal perfect for any gathering.

- 2 tablespoons unsalted butter
- 4 large yellow onions, thinly sliced
- 1 teaspoon granulated sugar
- 1/2 teaspoon salt, plus more to taste
- 1/4 teaspoon black pepper, plus more to taste
- 2 cloves garlic, minced
- 1/4 cup dry white wine (optional)
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon fresh thyme leaves
- 8 slices crusty bread (like baguette or sourdough), about 1 inch thick
- 1 1/2 cups grated Gruyère cheese
Instructions
- Melt butter in a large pot or Dutch oven over medium heat. Add sliced onions, sugar, salt, and pepper. Cook, stirring occasionally, until onions are deeply caramelized and golden brown, about 45-60 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- If using, add white wine and scrape up any browned bits from the bottom of the pot. Let it simmer until mostly evaporated.
- Pour in beef broth and Worcestershire sauce. Stir in fresh thyme leaves. Bring to a simmer, then reduce heat to low and let it gently simmer for 15 minutes to allow flavors to meld. Taste and adjust seasoning if needed.
- Preheat your broiler.
- Arrange bread slices on a baking sheet and toast them under the broiler until golden brown on both sides. Watch them closely to prevent burning.
- Pour the onion mixture into a 9×13 inch baking dish.
- Arrange the toasted bread slices over the onion mixture.
- Sprinkle the grated Gruyère cheese generously over the bread.
- Place the baking dish under the broiler and broil until the cheese is melted, bubbly, and golden brown, about 2-3 minutes.
- Let the casserole rest for a few minutes before serving.
Notes
- For an even richer flavor, you can use a combination of beef and chicken broth.
- If you don’t have Gruyère cheese, Swiss or Provolone cheese can be used as a substitute.
