Ingredients
- Catfish fillets
- Cornmeal
- All-purpose flour
- Salt
- Black pepper
- Paprika
- Garlic powder
- Onion powder
- Cayenne pepper (optional)
- Vegetable oil for frying
- Collard greens
- Smoked ham hock or bacon
- Onion

- Chicken or vegetable broth
- Apple cider vinegar
- Sugar
- Red pepper flakes (optional)
Instructions
- Rinse and pat dry the catfish fillets.
- In a shallow dish, combine cornmeal, flour, salt, pepper, paprika, garlic powder, onion powder, and cayenne pepper (if using).
- Dredge each catfish fillet in the cornmeal mixture, pressing to coat evenly.
- Heat vegetable oil in a large skillet or deep fryer to 350°F (175°C).
- Carefully place the coated catfish in the hot oil and fry for 4-6 minutes per side, or until golden brown and cooked through.
- Remove catfish from oil and drain on paper towels.
- Wash and chop the collard greens.
- In a large pot or Dutch oven, cook the ham hock or bacon over medium heat until browned.
- Add chopped onion and garlic to the pot and cook until softened.
- Stir in the collard greens, broth, apple cider vinegar, sugar, and red pepper flakes (if using).
- Bring to a simmer, then reduce heat, cover, and cook for 45-60 minutes, or until the greens are tender.
- Season collard greens with salt and pepper to taste.
- Serve the fried catfish with the cooked collard greens.
Notes
- For crispier catfish, ensure the oil is at the correct temperature and do not overcrowd the pan.
- Cooking time for collard greens may vary depending on their freshness and thickness.
- Adjust seasonings in both the catfish coating and collard greens to your preference.
