Instructions
- Line a baking sheet with parchment paper.
- In a medium bowl, combine Greek yogurt, honey or maple syrup, and vanilla extract. Stir until smooth.
- Spread the yogurt mixture evenly onto the prepared baking sheet, about 1/4 inch thick.
- Scatter the mixed berries and optional nuts or seeds over the yogurt.
- Place the baking sheet in the freezer and freeze for at least 3-4 hours, or until completely firm.
- Once frozen, break the bark into pieces.
- Serve immediately or store in an airtight container in the freezer.
