Description

Make classic, crispy, golden brown funnel cakes at home quickly. This easy recipe delivers authentic fair-style fried dough dessert in under 20 minutes.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Vegetable oil, for frying
  • Powdered sugar, for dusting

Instructions

  1. Combine flour, sugar, baking powder, and salt in a large bowl. Whisk dry ingredients together.
  2. In a separate bowl, whisk together milk, eggs, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients. Whisk until just combined; do not overmix. A few small lumps are acceptable for a tender interior.
  4. Heat 2 to 3 inches of vegetable oil in a deep, heavy-bottomed pot or Dutch oven to 375 degrees Fahrenheit. Use a thermometer to monitor the temperature.
  5. Transfer the batter to a funnel with a small piece of aluminum foil placed over the opening to plug the spout. Hold the funnel over the hot oil.
  6. Remove the foil and immediately move the funnel in a circular motion to create a crisscross pattern, forming a cake shape. Continue circling until the cake is about 6 inches wide.
  7. Fry for about 1 to 2 minutes per side, until golden brown and crispy.
  8. Carefully remove the funnel cake with a slotted spoon or spider strainer and place it on a wire rack lined with paper towels to drain excess oil.
  9. Repeat with the remaining batter, ensuring the oil returns to 375 degrees Fahrenheit between batches.
  10. Dust generously with powdered sugar before serving immediately.

Notes

  • For the best crispness, maintain the oil temperature at 375 degrees Fahrenheit. If the oil is too cool, the cake will absorb too much oil and become soggy.
  • If you do not have a funnel, you can use a large zip-top bag, snip a small corner off, and pipe the batter into the oil.
  • Serve with fresh berries or chocolate syrup for extra flavor.
