Instructions

- Heat 2 to 3 inches of vegetable oil in a deep, heavy-bottomed pot or Dutch oven to 375 degrees Fahrenheit. Use a thermometer to monitor the temperature.
- Transfer the batter to a funnel with a small piece of aluminum foil placed over the opening to plug the spout. Hold the funnel over the hot oil.
- Remove the foil and immediately move the funnel in a circular motion to create a crisscross pattern, forming a cake shape. Continue circling until the cake is about 6 inches wide.
- Fry for about 1 to 2 minutes per side, until golden brown and crispy.
- Carefully remove the funnel cake with a slotted spoon or spider strainer and place it on a wire rack lined with paper towels to drain excess oil.
- Repeat with the remaining batter, ensuring the oil returns to 375 degrees Fahrenheit between batches.
- Dust generously with powdered sugar before serving immediately.
Notes
- For the best crispness, maintain the oil temperature at 375 degrees Fahrenheit. If the oil is too cool, the cake will absorb too much oil and become soggy.
- If you do not have a funnel, you can use a large zip-top bag, snip a small corner off, and pipe the batter into the oil.
