A simple recipe for fluffy quinoa cooked in broth and finished with garlic, butter, and green peas for a savory side dish.

- 1 cup quinoa, rinsed
- 2 cups vegetable broth or water
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 cup frozen green peas
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Rinse the quinoa thoroughly under cold running water using a fine-mesh sieve until the water runs clear.
- Combine the rinsed quinoa and vegetable broth (or water) in a medium saucepan.
- Bring the mixture to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes, or until all the liquid is absorbed.
- Remove the saucepan from the heat and let it stand, covered, for 5 minutes.
- While the quinoa rests, melt the butter in a small skillet over medium heat.
- Add the minced garlic to the skillet and cook for about 1 minute until fragrant, being careful not to burn it.
- Add the frozen green peas to the skillet with the garlic butter. Cook for 3 to 4 minutes until the peas are heated through.
- Fluff the cooked quinoa with a fork in its saucepan.
- Add the garlic butter and peas mixture to the quinoa. Stir gently to combine.
- Season with salt and pepper. Stir in the fresh parsley, if using. Serve immediately.
Notes
- For extra flavor, toast the rinsed, dry quinoa in the empty saucepan with 1 teaspoon of butter for 2 minutes before adding the broth.
- If you prefer a richer flavor, substitute half the broth with chicken broth.
- This recipe works well with fresh or frozen peas; canned peas should be drained well before adding.
