Ingredients

Scale
  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1.5 lbs baby potatoes, halved or quartered
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potatoes with olive oil, salt, pepper, rosemary, and thyme.
  3. Spread the seasoned potatoes in a single layer on a baking sheet.
  4. Roast for 20-25 minutes, or until tender and slightly browned.
  5. While the potatoes are roasting, pat the steak bites dry with paper towels. Season them with salt and pepper.
  6. In a large skillet, melt the butter over medium-high heat.
  7. Add the minced garlic and cook for about 1 minute until fragrant.
  8. Add the steak bites to the skillet in a single layer. Sear for 2-3 minutes per side, until browned. Do not overcrowd the pan; cook in batches if necessary.
  9. Once the potatoes are roasted, add them to the skillet with the steak bites.
  10. Toss everything together to coat with the garlic butter.
  11. Cook for another 2-3 minutes, allowing the flavors to meld.
  12. Garnish with fresh parsley before serving.

Notes

  • For crispier potatoes, you can roast them for an additional 5-10 minutes.
  • Adjust the amount of garlic to your preference.
  • Feel free to add other vegetables like bell peppers or onions to the pan.
