- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1.5 lbs small potatoes (like Yukon Gold or red), quartered
- 3 tablespoons olive oil, divided
- 1 teaspoon salt, divided
- 0.5 teaspoon black pepper, divided
- 1 teaspoon dried Italian seasoning
- 1 teaspoon garlic powder
- 4 cloves garlic, minced
- 0.5 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.
- In a large bowl, toss the quartered potatoes with 1 tablespoon of olive oil, half of the salt, and half of the pepper. Spread the potatoes in a single layer on the prepared baking sheet.
- Roast the potatoes for 15 minutes while you prepare the chicken.
- In the same bowl, toss the chicken pieces with the remaining 2 tablespoons of olive oil, the remaining salt and pepper, Italian seasoning, and garlic powder.
- Remove the baking sheet from the oven. Push the partially cooked potatoes to one side of the pan. Add the seasoned chicken pieces to the other side, spreading them into a single layer.
- Return the sheet pan to the oven and bake for another 10 minutes.
- While the chicken and potatoes finish cooking, mix the minced garlic and grated Parmesan cheese in a small bowl.
- Remove the pan from the oven. Sprinkle the garlic Parmesan mixture evenly over the chicken and potatoes.
- Bake for a final 5 to 7 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the cheese is melted and lightly golden.
- Remove from the oven, sprinkle with fresh parsley, and serve directly from the pan.
Notes
- For crispier potatoes, toss them with 1 tablespoon of cornstarch before seasoning and roasting.
- You can substitute chicken thighs for breasts, but adjust the cooking time slightly.
- If you prefer a richer sauce, add 2 tablespoons of melted butter to the garlic and Parmesan mixture before sprinkling.
