Description

Prepare a flavorful, simple dinner with this one-pan recipe featuring tender chicken breasts and roasted potatoes coated in a rich garlic Parmesan sauce.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1.5 lbs small potatoes (like Yukon Gold or red), quartered
  • 3 tablespoons olive oil, divided
  • 1 teaspoon salt, divided
  • 0.5 teaspoon black pepper, divided
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon garlic powder
  • 4 cloves garlic, minced
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.
  2. In a large bowl, toss the quartered potatoes with 1 tablespoon of olive oil, half of the salt, and half of the pepper. Spread the potatoes in a single layer on the prepared baking sheet.
  3. Roast the potatoes for 15 minutes while you prepare the chicken.
  4. In the same bowl, toss the chicken pieces with the remaining 2 tablespoons of olive oil, the remaining salt and pepper, Italian seasoning, and garlic powder.
  5. Remove the baking sheet from the oven. Push the partially cooked potatoes to one side of the pan. Add the seasoned chicken pieces to the other side, spreading them into a single layer.
  6. Return the sheet pan to the oven and bake for another 10 minutes.
  7. While the chicken and potatoes finish cooking, mix the minced garlic and grated Parmesan cheese in a small bowl.
  8. Remove the pan from the oven. Sprinkle the garlic Parmesan mixture evenly over the chicken and potatoes.
  9. Bake for a final 5 to 7 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the cheese is melted and lightly golden.
  10. Remove from the oven, sprinkle with fresh parsley, and serve directly from the pan.

Notes

  • For crispier potatoes, toss them with 1 tablespoon of cornstarch before seasoning and roasting.
  • You can substitute chicken thighs for breasts, but adjust the cooking time slightly.
  • If you prefer a richer sauce, add 2 tablespoons of melted butter to the garlic and Parmesan mixture before sprinkling.
