- 1 medium spaghetti squash
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 cup grated Parmesan cheese, plus more for serving
- 2 tablespoons fresh parsley, chopped
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Carefully cut the spaghetti squash in half lengthwise. Scoop out and discard the seeds.
- Place the squash halves cut-side down on a baking sheet. Roast for 30 to 40 minutes, or until tender when pierced with a fork.
- Remove the squash from the oven and let it cool slightly. Use a fork to scrape out the flesh into strands, resembling spaghetti.
- While the squash is hot, heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
- Add the spaghetti squash strands to the skillet. Toss well to coat with the garlic oil.
- Remove the skillet from the heat. Stir in the grated Parmesan cheese and chopped parsley.
- Season with salt and pepper to your liking.
- Serve immediately with extra Parmesan cheese on top.
Notes
- For easier cutting, pierce the squash several times with a fork before baking whole, then cut after baking.
- Use fresh garlic for the best flavor.
- You can add a pinch of red pepper flakes for a little heat.
