Ingredients

  • 1 cup stone-ground grits
  • 4 cups water or chicken broth
  • 1 teaspoon salt
  • 1/2 cup heavy cream
  • 1/2 cup grated sharp cheddar cheese
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/4 cup dry white wine or chicken broth
  • 1 tablespoon fresh lemon juice
  • 1/4 cup chopped fresh parsley
  • Pinch of cayenne pepper (optional)


Instructions

  1. Bring the water or broth and salt to a boil in a medium saucepan.
  2. Slowly whisk in the grits. Reduce heat to low, cover, and simmer according to package directions, stirring often, until thick and creamy.
  3. Stir the heavy cream and cheese into the cooked grits until smooth. Keep warm.
  4. Melt 2 tablespoons of butter in a large skillet over medium heat.
  5. Add the minced garlic and cook for about 30 seconds until fragrant. Do not let it brown.
  6. Add the shrimp to the skillet. Cook for 2-3 minutes per side until pink and opaque.
  7. Pour in the white wine or broth and lemon juice. Let it bubble and reduce slightly, scraping up any browned bits from the bottom of the pan.
  8. Stir in the remaining 2 tablespoons of butter, parsley, and cayenne pepper, if using. Toss to coat the shrimp.
  9. Divide the creamy grits among serving bowls. Top generously with the garlic shrimp and pan sauce.

Notes

  • For extra richness in the grits, substitute half of the water/broth with milk.
  • If you prefer, you can add a dash of hot sauce to the shrimp mixture for extra heat.
