  • 1/2 cup milk (dairy or non-dairy)
  • Optional: 1/2 cup berries or chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the almond flour, oat flour, protein powder, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, whisk together the eggs, applesauce, maple syrup, melted coconut oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  5. Gradually add the milk and stir until the batter reaches a thick but pourable consistency. If using, gently fold in berries or chocolate chips.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
