  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups chopped romaine lettuce
  • 1 cup chopped cucumber
  • 1 cup chopped tomatoes
  • 1/2 cup sliced red onion
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • Optional: 1/4 cup cooked quinoa or brown rice per bowl


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the chicken with olive oil, oregano, dill, garlic powder, onion powder, salt, and pepper.
  3. Spread the chicken in a single layer on a baking sheet.
  4. Bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Let it rest for a few minutes, then chop or shred it.
  5. While the chicken is baking, prepare the tzatziki sauce. In a small bowl, whisk together Greek yogurt, lemon juice, minced garlic, salt, and pepper.
  6. Assemble your gyro bowls. Divide the chopped romaine lettuce among your meal prep containers.
  7. Top the lettuce with chopped cucumber, tomatoes, red onion, and Kalamata olives.
  8. Add the cooked chicken to each bowl.
  9. Dollop a spoonful of tzatziki sauce over the chicken.
  10. Sprinkle with crumbled feta cheese.
  11. If using, add cooked quinoa or brown rice to the bowls.
  12. Seal containers and refrigerate until ready to enjoy.
