Description

Make flavorful roasted potatoes seasoned with lemon, oregano, and garlic, then baked with salty feta cheese until golden brown.


Ingredients

  • 2 lbs Yukon Gold potatoes, cut into 1-inch pieces
  • 1/2 cup olive oil
  • 1/4 cup fresh lemon juice
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 ounces feta cheese, crumbled


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the cut potatoes, olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Toss until the potatoes are evenly coated.
  3. Spread the seasoned potatoes in a single layer on a large baking sheet.
  4. Roast for 30 minutes, stirring once halfway through, until the potatoes start to become tender and lightly browned.
  5. Remove the baking sheet from the oven. Sprinkle the crumbled feta cheese evenly over the potatoes.
  6. Return the potatoes to the oven and roast for another 10 to 15 minutes, or until the feta is slightly softened and the potatoes are crispy on the edges.
  7. Serve immediately as a side dish.

Notes

  • For extra crispiness, soak the cut potatoes in cold water for 30 minutes before seasoning, then dry them completely.
  • You can add 1/2 teaspoon of smoked paprika with the other seasonings for a deeper flavor.
