  • 1 cucumber, peeled, seeded, and chopped
  • 1 green bell pepper, seeded and chopped
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 6 ounces feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste


Instructions

  1. In a large bowl, combine the chopped tomatoes, cucumber, green bell pepper, red onion, and Kalamata olives.
  2. Add the crumbled feta cheese to the bowl.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, and Dijon mustard.
