- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 2 ripe peaches, diced
- 1/4 cup red onion, finely diced
- 2 tablespoons fresh cilantro, chopped

- 1/2 jalapeño, seeded and minced (optional)
Instructions
- Preheat your grill to medium-high heat.
- Brush chicken breasts with olive oil and season with salt and pepper.
- Grill chicken for 6-8 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
- While chicken grills, combine diced peaches, red onion, cilantro, lime juice, and jalapeño (if using) in a bowl. Stir gently to combine.
- Let the grilled chicken rest for a few minutes before serving.
- Serve grilled chicken topped with fresh peach salsa.

- Choose firm but ripe peaches for the best texture in the salsa.
