- 4 ears of corn, husked
- 2 tablespoons olive oil
- 1/2 cup crumbled cotija cheese
- 1/4 cup mayonnaise
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Cut corn into 2-inch pieces and thread onto skewers.
- Brush corn with olive oil and season with salt and pepper.
- Grill corn for 8-10 minutes, turning occasionally, until tender and lightly charred.
- In a small bowl, mix together mayonnaise, cilantro, lime juice, and chili powder.
- Spread the mayonnaise mixture over the grilled corn.
- Sprinkle with cotija cheese.
- Serve immediately.
Notes
- For extra spice, add a pinch of cayenne pepper to the mayonnaise mixture.
- If you don’t have cotija cheese, feta cheese can be used as a substitute.
