Ingredients

  • 4 ears of corn, husked
  • 2 tablespoons olive oil
  • 1/2 cup crumbled cotija cheese
  • 1/4 cup mayonnaise
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste


Instructions

  1. Preheat grill to medium-high heat.
  2. Cut corn into 2-inch pieces and thread onto skewers.
  3. Brush corn with olive oil and season with salt and pepper.
  4. Grill corn for 8-10 minutes, turning occasionally, until tender and lightly charred.
  5. In a small bowl, mix together mayonnaise, cilantro, lime juice, and chili powder.
  6. Spread the mayonnaise mixture over the grilled corn.
  7. Sprinkle with cotija cheese.
  8. Serve immediately.

Notes

  • For extra spice, add a pinch of cayenne pepper to the mayonnaise mixture.
  • If you don’t have cotija cheese, feta cheese can be used as a substitute.
