Description

Prepare flavorful, juicy chicken breasts or thighs using a traditional Cuban mojo marinade and grilling technique.


Ingredients

  • 4 boneless, skinless chicken breasts or 6 thighs
  • 1 cup sour orange juice (or 1/2 cup fresh orange juice plus 1/2 cup fresh lime juice)
  • 1/2 cup olive oil
  • 8 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped (optional)


Instructions

  1. In a bowl, whisk together the sour orange juice, olive oil, minced garlic, oregano, cumin, salt, and pepper to make the mojo marinade.
  2. Place the chicken in a large resealable bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated.
  3. Refrigerate and marinate for at least 4 hours, or preferably overnight.
  4. Preheat your grill to medium-high heat (about 400°F or 200°C). Lightly oil the grates.
  5. Remove the chicken from the marinade, letting excess drip off. Discard the used marinade.
  6. Grill the chicken for 6 to 8 minutes per side, depending on thickness, until the internal temperature reaches 165°F (74°C).
  7. Remove the chicken from the grill and let it rest for 5 minutes before serving. Garnish with fresh cilantro if desired.

Notes

  • For a complete Cuban meal, serve this chicken with white rice, black beans, and fried sweet plantains.
  • If you do not have sour oranges, the mix of orange and lime juice provides a close substitute for the required acidity.
  • If using chicken thighs, they may require a few extra minutes on the grill compared to breasts.
