Description

Learn how to grill Mexican street corn, or elote, to perfection. This recipe guides you through achieving delicious charred kernels and a creamy, flavorful coating.


Ingredients

  • 4 ears of corn, husked
  • 2 tablespoons olive oil
  • 1/2 cup mayonnaise
  • 1/4 cup cotija cheese, crumbled
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • 1/4 teaspoon chili powder
  • Salt and pepper to taste


Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the corn with olive oil.
  3. Grill the corn, turning occasionally, until it’s tender and has charred spots, about 10-15 minutes.
  4. While the corn is grilling, mix together the mayonnaise, cotija cheese, cilantro, lime juice, minced garlic, and chili powder in a small bowl.
  5. Once the corn is grilled, spread the mayonnaise mixture evenly over each ear.
  6. Serve immediately.

Notes

  • For extra spice, add a pinch of cayenne pepper to the mayonnaise mixture.
  • If you can’t find cotija cheese, feta cheese is a good substitute.
  • You can also grill the corn in foil if you prefer it softer.
