- 4 ears of corn, husked
- 2 tablespoons olive oil
- 1/2 cup mayonnaise
- 1/4 cup cotija cheese, crumbled
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon lime juice
- 1 clove garlic, minced
- 1/4 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Preheat your grill to medium-high heat.
- Brush the corn with olive oil.
- Grill the corn, turning occasionally, until it’s tender and has charred spots, about 10-15 minutes.
- While the corn is grilling, mix together the mayonnaise, cotija cheese, cilantro, lime juice, minced garlic, and chili powder in a small bowl.
- Once the corn is grilled, spread the mayonnaise mixture evenly over each ear.
- Serve immediately.
Notes
- For extra spice, add a pinch of cayenne pepper to the mayonnaise mixture.
- If you can’t find cotija cheese, feta cheese is a good substitute.
- You can also grill the corn in foil if you prefer it softer.
