Description

Grilled pineapple and chicken kabobs are sweet and savory skewers perfect for grilling season. Tender chicken and sweet pineapple are marinated and grilled for a delicious meal.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 cups fresh pineapple chunks
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon black pepper


Instructions

  1. In a large bowl, whisk together soy sauce, honey, olive oil, garlic, ginger, and black pepper.
  2. Add chicken cubes and pineapple chunks to the marinade. Toss to coat.
  3. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  4. Preheat grill to medium-high heat.
  5. Thread chicken and pineapple onto skewers.
  6. Grill kabobs for 10-12 minutes, turning occasionally, until chicken is cooked through and pineapple is caramelized.
  7. Serve hot.

Notes

  • If using wooden skewers, soak them in water for at least 30 minutes before threading to prevent burning.
