Grilled pineapple and chicken kabobs are sweet and savory skewers perfect for grilling season. Tender chicken and sweet pineapple are marinated and grilled for a delicious meal.
Ingredients

- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 cups fresh pineapple chunks
- 1/2 cup soy sauce
- 1/4 cup honey
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- 1 teaspoon grated fresh ginger
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, whisk together soy sauce, honey, olive oil, garlic, ginger, and black pepper.
- Add chicken cubes and pineapple chunks to the marinade. Toss to coat.
- Cover and refrigerate for at least 30 minutes, or up to 4 hours.
- Preheat grill to medium-high heat.
- Thread chicken and pineapple onto skewers.
- Grill kabobs for 10-12 minutes, turning occasionally, until chicken is cooked through and pineapple is caramelized.
- Serve hot.
Notes
- If using wooden skewers, soak them in water for at least 30 minutes before threading to prevent burning.
- You can add other vegetables to the skewers, such as bell peppers or onions.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
